Many people who are involved in competition cooking use this style because they have too cook 4 briskets of 8 racks of ribs at the same time and they all need to cook evenly and finish at the same time. Commonly called reverse flow smokers, these are known for having the most even temperatures throughout the main cooking chamber because the hot air and smoke is channeled to the left side of the pit by plates beneath the racks and then back to the right side over the racks to the smoke stack.
We believe ours works with great flow by using the large diameter 4.5 inch and tall smoke stack. The tuning plates are adjustable and set on rails. We build this pit all 1/4". The main cooking chamber measures 40 inches long. It is made from 20 inch diameter pipe.
The firebox is 20 inch by 21 inch tall. It features slider air controls so you can adjust even with the change of wind direction. The firebox has a 10 inch by 20 inch space for heating sauce or beans atop.
The heat distribution plates are removable so you can grill in the main cooking area too. We finished it out with our custom look and features like the super large shelf and slide out racks. It features a counter weight on the lid to help lighten the lift.
